Hello,
 
I would like to know if it is possible to change the file types backup of an already setup backup job. Say, by changing from "backup all file types" to "exclude these file types", or adding/deleting file types to backup.

I believe the current version doesn’t allow editing the file types once created; however, it is just as easy to delete the task, but “keep the Backup Sets on Server”, then recreate the same name backup task with excluded file types.
